On Thursday, February 13th, this collaboration between Hush x IWA 5 dinner will celebrate an exceptional tasting experience and culinary artistry by Chef Tommy Zheng with a 14-course menu, thoughtfully paired with a vertical range of (6) IWA 5 Assemblage pours, from various vintage years – 2021, 2022, 2023, and the newest release Assemblage 5 2024, curated by IWA Representative Brenton Blanchard.
When Wine Spectator christened IWA 5 as “a sake for wine lovers,” we took notice. IWA 5 is a new craft in the world of sake, founded by Richard Geoffroy, the legendary former winemaker of Dom Pérignon for 28 years. After nearly three decades crafting one of the world's most iconic champagnes, Geoffroy transitioned from the world of winemaking to the art of sake brewing, driven by his fascination with and love for Japan and its culture, and his desire to contribute to Japan in a meaningful way. Richard is using winemaking philosophies and techniques in crafting IWA 5 by blending 20 different sakes, ageing in bottle and releasing one Assemblage (“Blend”) per year. The result is a complex, balanced and versatile sake, for pairing with various cuisines and occasions.
